The bee sting is a cake classic that is prepared on the baking sheet. According to a legend, the name of the cake goes back to a planned attack on the city of Andernach in the 15th century. This could be prevented with the help of bee nests.
Bee sting - you need these ingredients
For a beehive baking sheet, you need ingredients for the dough, for the topping and for the filling.
- For the dough : 1/4 liter warm milk, 500g sifted flour, 1/2 pack of fresh yeast, 75g sugar, 75g melted butter, 1 pinch of salt and a greased baking sheet
- For the topping : 100g butter, 150g sugar, 1 packet of vanilla sugar, 3 tablespoons milk, 200g flaked almonds
- For the filling : 2 egg yolks, 2 tablespoons sugar, 90g cornstarch, 1 liter milk, 80g powdered sugar, 1 packet of vanilla sugar, 150g soft butter
Step-by-Step Guide
First the dough is made. Then make the covering. If both are in the oven, make the filling.
- Put the flour in a mixing bowl and press a hollow in the middle. Crumble in the yeast and 1/2 teaspoon of sugar . Mix the yeast with a little milk and flour from the edge to form a thick paste and let the whole thing covered in a warm place for about 10 minutes.
- Stir the melted butter into the warm milk . Then add this liquid to the dough in small portions along with the remaining sugar and a pinch of salt . It is best to knead first with the dough hook and then again with your hands.
- The dough must now be covered and left to rise in a warm place for 60 minutes. Then knead it again and then roll it out on a greased baking sheet . Also, if necessary, preheat the oven to 200 degrees.
- To make the topping, melt the butter, sugar, vanilla sugar and 3 tablespoons of milk in a saucepan. Then add the almonds and the mixture should boil briefly.
- Let the mixture cool a little and then spread it on the dough . You should let it go for about 10 minutes before baking at 200 degrees for about 20 minutes.
- For the filling, mix the two egg yolks with the cornstarch and 1 tbsp of the sugar . Add a quarter liter of milk . Boil the rest of the milk and sugar together with the powdered and vanilla sugar .
- Then stir the egg yolk mixture into the boiled milk and let the whole thing boil again. Take the pot off the stove and let the mixture cool down a little while stirring.
- Now whisk the soft butter until frothy and gradually mix it under the milk cream . Finally, cut the cake into individual pieces and cut them in half horizontally. Now fill the cake slices with the finished cream.
