Recipe: homemade curry ketchup
You can get the ingredients from any supermarket. You need 1 can of lumpy tomatoes or 5 large vine tomatoes, for sweet agave syrup or about 10 dates, 1 onion, curry powder, tomato paste, apple cider vinegar, olive oil or sunflower oil as well as salt and pepper. If you want to add a spicy note, you also need a chili pepper.
- Cut all fresh ingredients, i.e. tomatoes, onions and chilli, into pieces. Be sure to remove the chilli seeds if you don't like it very spicy.
- Use dates as a sweetener, put them in a bowl and pour boiling water over them. Let the whole thing steep for three quarters of an hour.
- Heat the oil in a pan and add the onions and chilli. When the ingredients have become glassy, add 2 tablespoons of tomato paste and let it roast briefly.
- Now add 3 tablespoons of vinegar and the dates or 5 tablespoons of agave syrup. Let everything simmer for a few minutes. After 3 to 4 minutes, add the fresh tomato pieces or the canned tomatoes.
- Depending on the consistency and preference, you can add some water. Let everything simmer again for 5 minutes over medium heat.
- Now switch off the stove and taste the sauce with salt, pepper and curry. You may have to puree the sauce now.
- If the result corresponds to your ideas, fill the sauce into boiled and screwable glasses or glass bottles.
