Donauwelle: recipe for the cake classic

The Donauwelle is a classic on the cake table. The sinking cherries give the two-tone dough its typical wave shape. This should probably be reminiscent of the swell of the Danube.
Donauwelle - you need these ingredients
At first glance, the list of ingredients for a wave of the Danube seems long. If you bake more often, you will already have a lot of it at home.
- 1kg drained sour cherries from the glass
- 250g butter
- 180g sugar
- 1 pinch of salt
- 6 eggs
- 400g sifted flour
- 3 tsp baking powder
- 6 tablespoons milk
- 2 tbsp cocoa powder
- A little fat for the baking sheet
- For the covering you also need:
- 1 packet of custard powder
- 1/2 liter of milk
- 1 tablespoon of sugar
- 200g soft butter
- 50g powdered sugar
- 200g dark chocolate coating
Step-by-Step Guide
You should plan about 45 minutes for the preparation. The cake takes an additional 30 minutes in the oven.
- Preheat the oven to 180 degrees and grease the baking sheet.
- Stir the butter smoothly and then add the sugar and pinch of salt in portions. Then stir in the eggs one by one. Add the flour and baking powder in spoons. Then add 4 tablespoons of the milk.
- Spread half of the dough on the baking sheet. Mix the other half with cocoa and the remaining milk and spread it over the light dough.
- Now place the cherries on the dark dough and press them lightly. The cake is then baked for 30 minutes and then has to cool down.
- In the meantime, prepare the covering. Make a pudding from the pudding powder, sugar and milk. Alternatively, you can make the custard yourself. This also has to cool down.
- Stir the butter until creamy and gradually add the pudding. The finished cream is then spread over the cooled cake.
- Finally, melt the couverture in a hot water bath and spread them on the cake. With a fork you can then draw the typical wavy decorations in the still soft couverture.
