Replace egg with applesauce - how it works
You can easily replace an egg in a cake with apple sauce when baking. We have summarized how this works and what you should consider here.
Vegan alternative: replace egg with applesauce
If you want to bake without an egg, use applesauce for your sponge cake or muffins instead of chicken egg. The advantage of the fruity muse over other egg alternatives: it harmoniously blends in with sweet recipes. That's how it works:
- Instead of the mentioned chicken egg, take two to three tablespoons of finely pureed apple sauce. This corresponds to about 60 to 80 grams of puree per egg .
- You can try out how many eggs you want to replace in a recipe like this. However, no more than two are recommended.
- This may make the cake firmer than with chicken egg. You will definitely get enough moisture. If you add 1/2 teaspoon of baking soda and a little baking soda, the result is more relaxed.
- If you prefer crumbly dough, it is better to omit the egg substitute altogether or use less applesauce. Otherwise your dough may become too sticky.
Other fruit sauces: other alternatives
Most other fruit pudding, made from baby jars, for example, is equally suitable as an egg substitute. However, they must not be too acidic. You can vary depending on the recipe and the flavor of your cake.
- You get a rich yellow-orange color with pumpkin in your muffins or the cake batter. Like apple, this is quite tasteless. It is also suitable for savory batter variants.
- A classic of vegan cuisine: mashed bananas. You can also use these great for sponge cake batter. Practical side effect: You can quickly utilize brown bananas overlaid in this way.
- Egg substitute powder is also available for a particularly authentic alternative.
