Make kefir yourself: the best tips and tricks
You can easily make healthy kefir yourself. The most important thing here is correct and hygienic handling of the mushroom so that production is successful.
Make kefir yourself - it's that easy
To make half a liter of kefir, you need 500 ml of room temperature UHT milk and a kefir mushroom. You also need a clean, closable glass, a plastic spoon and a plastic strainer.
- Rinse the mushroom thoroughly under running water and carefully pour it into the clean glass with the plastic spoon.
- Fill in the milk. The ratio between kefir tubers and milk should not exceed 1: 5.
- Seal the jar. However, it should not be closed tightly so that the carbon dioxide produced during fermentation can escape. Use a screw cap and turn it on only slightly. Alternatively, put some cling film with a rubber around the glass.
- Tip: Instead of a glass, you can also use a special fermentation container or a fermentation bung, which is commercially available.
- Place the jar in a dark place at room temperature. After two days you can separate the now fermented milk from the mushroom. To do this, pour the kefir over the plastic strainer into a clean glass bottle.
- Keep the finished kefir in the fridge if you don't enjoy it straight away.
- Rinse the mushroom thoroughly in the sieve with running water. Until you reuse it, put it in a sterilized jar and store it in the refrigerator. He stays there for a week.
Tips for making kefir
Even though kefir making is simple, there are a few things to consider.
- Hygienic handling of the mushroom is important. Use only clean glasses and clean plastic cutlery. There must be no detergent residues on the utensils used. These would destroy the fungus.
- Contact with metal is fatal to the fungus. For this reason, you must not use a metal spoon, metal sieve or other metallic objects during processing.
- You can freely choose the fat content of the milk. You can make kefir with both whole milk and the low-fat variant.
- Kefir should ferment for at least 16 hours. With a shorter fermentation time, the kefir can have a laxative effect.
- You should not let the kefir ferment for longer than 48 hours. If the drink is too long, it can cause constipation.
