Grinding ceramic knives: this is how it works

Sharpening ceramic knives - you should note that
It is best not to sharpen an expensive, noble and precious ceramic knife yourself. The risk of damaging the knife blade is too high. The professional is required for this procedure.
- If you still want to tackle the grinding and sharpening yourself, do not use a normal knife sharpener like the one you use for your steel blades. Always use a special knife grinder for ceramic knives. A test report on the best knife sharpeners can be found here.
- The specialized trade offers devices suitable for ceramic knives for sharpening your knife.
- The variant of the knife sharpener for pulling through the blade is one possibility here. When purchasing, make absolutely sure that the device has a firm stand or even a handle.
- The risk of injury due to the blade or sharpener slipping off the worktop is otherwise too great. It happened quickly and you cut your finger.
- Make absolutely sure that you use a knife sharpener with a diamond coating. Steel is not hard enough to grind ceramics.
- The grit of the sharpening device should have a grain size of 1, 000 to 1, 200 so that you can sharpen the knife cleanly and finely. A diamond whetstone is also suitable. With this, however, you are nowhere near as precise as with the sharpening device.
- If you are inexperienced in sharpening the knife, you should use a sharpener to pull the blade through anyway.
Grinding ceramic knives - the execution
Grind the knife with the sharpening device, first adjust it on the worktop and check whether the device is stationary.
- Hold the sharpener with your left hand if you are right-handed. Use the other to pull the knife through the sharpener. Please note the information provided by the manufacturer.
- Press the thumb of the holding hand against the top edge of the blade. This ensures better blade guidance in the sharpener.
- Pull your ceramic knife slowly and evenly through the sharpener. You should not be jerky. Proceed as if you were cutting a steak - in one go and cut.
- Always pull the entire length of the blade of the knife through the device. Otherwise, it will become unevenly sharp.
- Note: Be sure to hold the sharpener firmly while pulling the knife through it. Slipping the ceramic knife can cause bad wounds. A fall of the device can also damage the blade.
