Chervil: substitute for parsley and anise
If you would like to replace chervil when cooking, a mixture of anise and parsley is ideal.
- Chervil itself tastes like a mixture of anise and parsley. For this reason, the spice can be replaced by a 1: 1 mixture of these two ingredients.
- Anise gives the dish the slightly sweet aroma of chervil.
- If you don't have anise in the house, parsley alone is enough.
Fennel as another alternative
If you have fennel in stock, you can also use it as a replacement.
- With fennel you also replace the piquant taste of chervil in a ratio of 1: 1.
- Rub a chervil leaf between your fingers, your fingers smell of fennel and a little bit of anise.
- Tip: You can also use this test to distinguish whether it is actually chervil or a similar looking but poisonous hemlock. Grated hemlock leaves exude an unpleasant smell of mouse urine.
