In pastry training, you learn how to use desserts. This includes not only knowing the right mix and baking time for muffins and tarts, but also skillfully decorating them and keeping your own workplace hygienic.
- In pastry training, you learn everything about baking. You will master the production of marzipan, chocolates, ice cream, cakes, muffins and macarons perfectly after your training. In comparison to a baker, you learn here specifically how to make desserts and how to decorate creatively.
- Confectioner is a craft. During your training you will learn the right choice of ingredients, the correct mix and the baking time of sweet pastries.
- In addition to baking, you will also learn how to prepare and clean the workplaces and machines correctly.
- Decorating also needs to be learned and is not as easy as it appears. Shaping chocolate or making creative glazes are demanding tasks.

Training and profession of pastry chef

- The training as a confectioner is dual. That means it runs both in the vocational school and in the company. The training ends with a practical and written exam.
- The salary of a confectioner is in the lower range. In the first year of apprenticeship, you earn between 270 and 360 euros. In the second year it is about 300 to 410 euros, in the third year 360 to 480 euros. The average starting salary is between 1, 500 and 1, 700 euros gross.
- You will receive a journeyman's certificate once you have completed your training. With this, jobs in confectioneries, cafés, bakeries, the patisserie area of hotels and restaurants or in the baking and confectionery industry are waiting for you. Completed training also entitles you to study certain fields of study.
- After completing the basic training, you can train to become a master. This gives you the opportunity to start your own business. You can also train apprentices yourself.
