Vitamins in peppers: red is ahead
Paprika is a real vitamin C bomb in all colors.
- The red pepper has the most vitamin C. 100 grams contain 140 mg of vitamin C.
- Yellow peppers ranked second with 120 to 130 mg vitamin C per 100 grams.
- The bottom pepper is the green pepper. But here, too, there are still 115 mg of vitamin C in 100 g of healthy vegetables.
- By the way, paprika not only brings vitamin C, but also plenty of beta carotene, a precursor of vitamin A.
- The red pepper with 2.125 micrograms beta-carotene per 100 grams is also the leader here.
- In comparison: Green peppers with 530 micrograms beta-carotene contain significantly less of the healthy vitamin.
What the color code of the peppers means
There are different types of peppers.
- Regardless of the variety, the following applies: Immature pods are always green. They were harvested early and still contain a lot of chlorophyll - the reason for the green color.
- Store the peppers properly, change color to yellow and then either orange or red depending on the variety.
- During the ripening process, not only the vitamin content increases, but also the sugar content.
- For this reason, red peppers taste sweeter than green ones. Ripe peppers therefore bring a little more calories.
- While 100 grams of green peppers put just 20 calories on the plate, there are 37 calories for red peppers, which is still very little.
