For a delicious chocolate cream you need the following ingredients: 200g chocolate coating, 3 egg yolks, 40ml milk, 200ml cream, depending on your taste, some cinnamon and ginger powder
- Place the couverture in a metal bowl. The bowl should be temperature resistant. Heat the chocolate coating over a water bath.
- Add two teaspoons of cinnamon and ginger powder to the melted chocolate coating.
- Pick up a second bowl. Put the egg yolk in it.
- Mix the egg yolk with a little milk. Beat the mixture until it is creamy.
- Carefully add the melted chocolate coating to the egg yolk and milk mixture. Fold in the chocolate.
- Whip the cream and fold it into the mixture in small amounts. Make sure that you don't whip the cream too stiff. It should have a creamy consistency.
- Pour the chocolate cream into small dessert bowls. Refrigerate the dessert for at least an hour.
Tips for a successful chocolate cream
With the following tips you can conjure up the perfect chocolate cream:
- Top the chocolate cream with chocolate sprinkles. Fresh raspberries or strawberries are also suitable.
- If you use pasteurized protein from the package for the cream, remove it from the refrigerator in good time before serving. The protein means that the cream has a harder firmness than with normal eggs.
- Use a saw knife to chop the chocolate.
- Do not whip the cream completely stiff. Otherwise it does not combine so well with the couverture.
- Make sure that raw eggs are completely chilled and fresh.
- The more cocoa is in the chocolate, the better the chocolate cream binds.
- A water bath should never be too hot. Already 30 degrees is enough to melt the chocolate. Otherwise the chocolate can clot or clump.
- Always fold in the cream. This will make the cream creamy and fluffy.
