How to make the perfect chocolate glaze
Making the perfect chocolate glaze is not that easy, because it shouldn't be too thick, shine beautifully, be evenly distributed and also taste good. We'll give you the best tips.
- Ingredients (amount for a cake): 250g dark chocolate, 50g butter or margarine, 1 tbsp coconut oil or sunflower oil or alternatively cream
- Dark chocolates with a cocoa content of 60 percent or more are best suited for the chocolate glaze, as the result is the best. The use of whole milk chocolate is also possible.
- Start the preparation by heating water in a saucepan. Make sure that the water does not boil, otherwise the temperature is too hot for the chocolate.
- Put the chopped chocolate together with butter or margarine in a metal bowl and place it over the hot water. Make sure that the chocolate bowl does not touch the water. The easiest way is with special melting pots.
- Let chocolate and butter melt slowly at low temperature and stir regularly. If the chocolate mass gets too hot, the chocolate loses its shine and turns gray afterwards. Also make sure that no water gets into the chocolate.
- When everything is well mixed, you can take the bowl out of the water bath. For a particularly beautiful shine, you can then add a tablespoon of oil, such as coconut oil or a tablespoon of cream, and stir well.
- Then the production of the chocolate glaze is finished and it is time to apply. The pastries should be completely cooled so that the chocolate can dry faster.
- For muffins, the best way is to dip the individual pieces into the chocolate mass. For biscuits, it is best to use a baking brush, for cakes, pour the chocolate in the middle and spread it out using a large spoon or spatula.
- Small bumps and blemishes in the chocolate glaze can also be repaired at the end by lightly drying the area.
