How to Freeze Salsify
Like other bulbous vegetables, salsify only stays in the fridge for a few weeks. To make the tuber more durable, you can freeze it.
- Salsify can only be kept for a week or two.
- Salsify should be peeled to freeze.
- Boil water with two tablespoons of vinegar and blanch it.
- After a few minutes, take the salsify out of the water and let it drain.
- Dab the roots well with a kitchen towel.
- Take freezer bags and put the salsify in it.
- Frozen salsify can be kept for up to six months.
Store salsify in a cool place
Salsify does not necessarily have to be frozen.
- Unshelled black salsify can be kept in a cool place, for example in the basement.
- To do this, put them in a box or bucket.
- So salsify stays fresh for up to four months.
