Make mustard yourself: the best tips and tricks
You only need a few ingredients to make mustard yourself. The basic recipe can be changed into many tasty variations. Mild or spicy, you can prepare mustard the way you like it in a few simple steps.
The basic recipe for making mustard yourself
Be sure to use fresh, high quality ingredients. This guarantees a wonderfully spicy taste experience.
- Ingredients for homemade mustard: 250 g mustard seeds or mustard powder, 50 g sugar, 10 g salt, 175 ml water and apple cider vinegar.
- If you use mustard seeds as a base, you must grind them first. This works best with the food processor.
- Grind the grains as finely as you like. They determine how coarse the mustard will be later. The more granular the mustard is, the crisper its taste.
- If you use mustard powder, you can process it without preparation.
- Put the water and apple cider vinegar in a saucepan and heat the mixture. The liquid must not boil, otherwise the vinegar will evaporate. Then let the water-vinegar mixture cool down until it is lukewarm.
- Stir the ground mustard seeds or mustard powder into the liquid using a mixer. Add the salt and sugar. Let the paste soak for a few hours and then pour it into sterile jars. The mustard can be kept in the refrigerator for six months.
- The homemade mustard is very spicy at first, but it loses its spiciness after a few days and finally tastes pleasantly spicy.
Four variants for homemade mustard
When the basic recipe is ready, you can refine the mustard as you wish.
- You can get extra hot mustard if you add a ground chilli pepper to the basic recipe. Even with a teaspoon of wasabi, the mustard becomes the right tonic.
- Herbal mustard is an interesting modification of the basic recipe. Finely chop herbs and mix them with the mustard. Thyme, rosemary or dill taste particularly good.
- Raspberries give the basic recipe a fruity note. Puree 100 g fresh raspberries and mix the must in the mustard paste. If you like it sweeter, add a tablespoon of honey.
- For delicious honey mustard, add two to three tablespoons of honey to the basic recipe. Add another teaspoon of finely chopped dill. The honey mustard goes well with salmon and other fish dishes.
