- Sugar makes jam stable and gives the creme brulee a nice, crunchy crust. This diversity is difficult to achieve with alternative sweeteners.
- Natural sweeteners such as honey or agave syrup are considered a healthy alternative to sugar. However, these can only be enjoyed in moderation due to the high number of calories.
- Stevia is low in calories as a sugar substitute, but it is more difficult to dose because it is much sweeter. In addition, many do not like the somewhat bitter aftertaste.
- Sweetener is also low in calories. But not everyone can tolerate it: sweeteners can cause belching or swelling after eating.
Allulose: low-calorie and granular
The sweetener of the future could be allulose. The sugar substitute works without calories, but has the same consistency.
- A Rhenish company uses sugar beets to make a low-calorie sugar substitute called allulose. It has been in Japan since 2010. Now it will soon be available on the German market through Savanna Ingredients.
- In granular form, allulose has the same good properties when preparing food as sugar. The body cannot utilize its calories. Thus, allulose does not start and can also be consumed in large quantities.
- The sugar substitute occurs naturally in figs and raisins and is therefore not a novelty on the food market. Allulose should be cultivated in such a way that it is only slightly more expensive than conventional sugar.
- The sweetener, which should not only be used in food but also in drinks, should also remain free of genetic manipulation.
To stay healthy, you shouldn't exceed a certain amount of sugar a day.
