Make elderflower syrup yourself: recipe for every season
You can top off many drinks and desserts with elderflower syrup. This practical tip shows you how to make the sweet syrup yourself and what you need for it.
Recipe for elderflower syrup: this is needed
The elderflower syrup is a must not only in the Hugo. Sparkling wine, prosecco, mineral water and desserts also benefit from a dash of elderflower syrup. You need the following ingredients for around two liters of syrup:
- 12 large elderflower umbels
- 400 grams of cane sugar
- 1 lemon, 1 orange, 1 lime
- 25 grams of citric acid
- Liquid sweetener (if required)
Instructions: elderflower syrup
- Wash and grate the orange, lemon and lime thoroughly and cut the fruit into thin slices.
- Pour out the elderflower umbels well. This removes small bugs and dirt.
- Now layer everything in a large saucepan and add two liters of water.
- Place a sufficiently large plate upside down in the pot so that everything is well covered.
- Weigh down the plate with a weight of around one to two kilograms. Cans are ideal for this.
- Let the mixture soak in the refrigerator for two days. Put the lid on the pot.
- Place a piece of kitchen paper in a fine sieve, pour the mixture through the sieve and crush the fruit and flowers with a spoon.
- Take 200 ml of the juice and put it in a saucepan with 400 grams of cane sugar over medium heat.
- With constant stirring, the sugar is boiled until it dissolves.
- Now add the remaining juice and citric acid and let the syrup boil briefly again.
- If necessary, you can refine the syrup with liquid sweetener.
- You can then fill the syrup into bottles.
- You should wash the bottles in advance with hot water and let them drain.
